Ingredients

2 tbsp rice bran oil
18 raw whole green prawns, peeled, shells reserved
1 onion, rough chopped
½ tsp SIDS CRAZY SALT
4 cloves garlic, chopped
1 carrot, diced
2 sprigs thyme
2 bay leaves
4 black peppercorns
1 tsp smoked paprika
400 g diced tomatoes, canned or fresh
500 ml water
SIDS SALT & PEPPER to taste

Directions

Heat oil in a large pan then add prawn shells, onion, SIDS CRAZY SALT, garlic, carrot and thyme. Cook, stirring, until shells are pink and beginning to caramelise. Add bay, peppercorns and paprika then cook a minute more. Pour in water and tomatoes then simmer for 30 minutes.
Remove pan from the heat and strain the broth into a clean saucepan. Place back on heat and season with SIDS SALT & PEPPER to taste. Add prawns and simmer for 3 minutes until prawns are cooked.
To serve, ladle broth into bowls, add 3 prawns each and garnish with basil.
