Ingredients
3 tomatoes sliced 10 mm thick
¼ tsp SIDS CRAZY SALT
½ tsp chopped parsley
½ tsp chopped chives
½ tsp SIDS SALT & PEPPER
2 tbsp flour
2 eggs
Directions
Scoop out the tomato seeds and place them on a cutting board, chop up finely then scrape into a bowl. Sprinkle with SIDS CRAZY SALT then add parsley, chives, flour, eggs and SIDS SALT & PEPPER and whisk all together.
Coat a COLD non-stick frypan with butter then place the tomato rings in the pan. Fill the rings with the tomato mixture, cover with a lid and put pan on a LOW heat for 10 minutes.
Turn rounds over then place 1 heaped tsp of Mozzarella cheese and a sprinkle of Oregano and Basil on top of each round.
Refit the lid and cook a further 10 minutes on LOW heat.
Serve on warmed plates.
