Tomato Soup

A great favourite for everyone. Serve with thick slices of toasted, well buttered ciabatta bread.

Ingredients

1 tsp oil
1 onion, chopped
2 cloves garlic, minced
2 stalks celery, chopped
2x 400 ml cans tomatoes or fresh
½ cup water
3 tsp arrowroot
185 ml evaporated milk
50 g feta, crumbled
2 tbsp basil, chopped
½ tsp SIDS CRAZY SALT
¼ cup roasted pine nuts (optional)

Directions

In a large pan on medium heat, cook onion, SIDS CRAZY SALT, garlic and celery for 3 minutes until tender. Add tomatoes and water then bring to boil. Pour into food processor and blitz until smooth. Return to pan and bring to the boil. Blend arrowroot with a bit of evaporated milk and add to soup to thicken. Remove from the heat and add the remaining evaporated milk.
Serve sprinkled with feta cheese, basil and pinenuts.
