Tsukune Meat Skewers

Indulge i Japanese pub and barbecue favourite, known simply as 'tsukune' by the Japanese and served with a homemade yakitori sauce.

Ingredients

300g minced chicken
½ leek
4 spring onions
5 cm lotus root
1 tsp grated ginger
1 tsp saké
1 tsp mirin
1 tbsp rice bran oil
ground black pepper
GLAZE:--
1½ tbsp saké
1½ tbsp mirin
1½ tbsp soy sauce
1 tsp sugar
½ tsp SIDS CRAZY SALT

Directions

Chop the leek, lotus root and spring onions. Place all the ingredients in a bowl except for the glaze. Mix together until it becomes a thick paste. Form the mixture into meatballs using about 2 tbsp for each one.
In a frying pan, cook on each side without turning until well done and brown. Turn until all sides are cooked.
Add the mirin, saké, soy sauce, SIDS CRAZY SALT and sugar into the pan and coat well. Using tongs, thread the meatballs onto skewers.
Remove them from the heat and place them on a serving plate. Add a squeeze of lemon and enjoy.
