Ingredients

500 g fresh Tuatua or clams
1 tbsp red chilli, sliced
1 tbsp rice bran oil
½ tsp SIDS CRAZY LEMON
3 shallots, sliced
200 ml chicken stock
¼ cup spring onion, chopped
¼ cup coriander, chopped
SIDS SALT & PEPPER to taste
fish sauce to taste

Directions

Place Tuatua in a large bowl of cold water with 2 slices of chilli, stir and leave for 30 minutes then drain. This makes them spit out any sand.
Add oil to a large pan and add Tuatua then sauté until they start to open. Add chilli and shallots then sauté for 3-5 minutes. Add stock and SIDS CRAZY LEMON to deglaze then simmer for 4 minutes until all the Tuatua are open. Add spring onion and coriander. Season with fish sauce then season with SIDS SALT & PEPPER to taste.
