Ingredients

24 fresh Tuatua
2 tbsp rice bran oil
1 tbsp butter
½ cup minced onion
½ cup dried breadcrumbs
¼ cup orange capsicum, chopped fine
4 slices bacon
½ tsp oregano, dried
2 tsp SIDS SMOKEY GARLIC SAUCE
2 tbsp Parmesan cheese, grated
2 tsp chopped parsley
¼ tsp paprika
2 tbsp olive oil

Directions

Preheat oven to 175oC.
In a small pan, cook bacon until very crisp. Crumble and set aside.
Wash Tuatua and place in a shallow baking dish then in the oven for 1-2 minutes until Tuatuas open. Remove meat from shells then chop and set aside. Keep shells to serve.
Add 2 tbsp of oil and butter to a small pan and sauté onion, capsicum and garlic. Remove from heat and cool.
Set oven temperature to 230oC.
In a medium bowl, combine breadcrumbs, bacon, SIDS SMOKEY GARLIC SAUCE, oregano, cheese, vegetables and Tuatua. Mix well then fill the shells with the mixture and place on a baking tray. Drizzle with olive oil then sprinkle with parsley then paprika.
Bake in oven for 7 minutes then serve on a platter.
