So simple, but so good - steamed Tuatua served in their own liqueur. Serve with a crusty Italian bread, or over pasta.

Ingredients

40 fresh Tuatua
2 tbsp rice bran oil
1 cloves garlic, minced
1 cup white wine
2 tbsp butter
3 tbsp SIDS SMOKEY GARLIC SAUCE

Directions

Wash Tuatua to remove any dirt or sand.
In a large pot, heat oil over medium heat. Add garlic and sauté for 1 minute, until tender. Add white wine then boil until it has reduced to half its original volume.
Add Tuatua, cover and steam until they start to open. Add butter, SIDS SMOKEY GARLIC SAUCE, cover and cook until most or all of the Tuatua open. Transfer Tuatua and juice to 2 large bowls. Serve with lots of beer.
