Ingredients

¼ cup butter
1½ tbsp ginger root, minced
1½ tbsp garlic, minced
1 cup red onion, diced
1 tsp turmeric
½ tsp SIDS CRAZY SALT
1 tsp curry powder
1 tsp chilli powder
1 tsp Kopan masala
1 cup potato, parboiled & cubed
1 cup fresh tomatoes, chopped
4-5 cups water
120 g flat egg noodles
½ cup fresh spinach, chopped
1-2 tbsp soy sauce
1 tsp SIDS SALT & PEPPER to taste

Directions

Melt butter in a saucepan then add ginger, garlic and red onion. Stir-fry over medium-high heat for 1 minute. Add turmeric, SIDS CRAZY SALT, curry powder, chili powder and Kopan masala. Mix well and stir fry for ½ a minute. Add potatoes and tomatoes. Stir-fry 1 more minute. Add water and bring to a boil then add egg noodles and boil for 5 minutes, stirring occasionally. Add spinach and boil for another 1-2 minutes. If soup is too thick, add more water.
Season with soy sauce and SIDS SALT & PEPPER to taste.
Remove from heat and serve hot.
