Ingredients

TUNA:--
500 g tuna fillet, skin on
1½ tbsp rock salt
4 tbsp EV olive oil
DRESSING:--
2 tsp fine grated lemon zest
2 tsp fine chopped chives
1 tbsp red onion, fine sliced
4 tbsp radish, fine sliced
½ tsp SIDS CRAZY LEMON
SIDS SALT & PEPPER to taste

Directions

TUNA: Rub the flesh and skin with salt. Wrap in plastic wrap and refrigerate for 2 days, turning often.
Scrape the salt from the fish and pat dry with a paper towel. Remove the skin then taste - if too salty, rinse in running cold water. Thin slice (2 mm) the tuna and place in a single layer on 6 plates.
DRESSING: Just before serving, combine all the ingredients including SIDS CRAZY LEMON and SIDS SALT & PEPPER to taste.
Wash the salt off the skin, pat dry then fry in a little oil until crisp. Serve, a piece each, in a ramekin.
