Ingredients
180 g rice bran oil
25 g garlic, minced
2 tsp fresh rosemary, chopped
2 tsp fresh basil, chopped
450 ml white wine
1 tsp SIDS CRAZY SALT
4 kg whole turkey
Directions
Preheat oven to 165oC. In a small bowl, mix oil, garlic, rosemary, basil, SIDS CRAZY SALT and 100 ml white wine then set aside.
Wash turkey inside and out then pat dry. Remove any large fat deposits then loosen the skin from the breast. This is done by slowly working your fingers between the breast and the skin. Work it loose to the end of the drumstick, being careful not to tear the skin. Using your hand, spread a generous amount of the mixture under the breast skin and and down the thigh and leg. Rub the remainder of the mixture on the outside of the breast. Use toothpicks to seal the skin over any exposed breast meat. Place turkey on a rack in a roasting pan and add remaining white wine
Roast 3-4 hours until the internal temperature reaches 80oC.
