Ingredients
FRITTERS:--
4 zucchini, grated
1 tsp salt
¼ tsp SIDS CRAZY LEMON
100 g haloumi
2 tbsp dill (or chives or mint)
½ cup flour
½ tsp baking powder
2 eggs, lightly beaten
rice bran oil for frying
thin sliced tomatoes & avocado to serve
PISTACHIO SAUCE:--
100 g pistachios
1 small garlic clove
1 cup basil leaves
¼ cup EV olive oil
2 tsp SIDS LOW SUGAR RASPBERRY VINEGAR
SIDS SALT & PEPPER to taste
Directions
FRITTERS:- put zucchini in a colinder with the salt and let sit for 30 minutes. Squeeze out excess liquid (do not wash zucchini) and put into a bowl with haloumi and dill.
Sift flour and baking powder into the bowl then add eggs. Mix well to a thick consistency.
Heat oil in a frypan and in batches, drop large spoonfuls of the batter into the pan, cooking for 3 minutes each side.
Serve with pistachio sauce.
PISTACHIO SAUCE:-
In a blender, blitz SIDS LOW SUGAR RASPBERRY VINEGAR and the remaining ingredients with up to ¼ cup of water to make a slightly chunky paste. Season with SIDS SALT & PEPPER to taste.
