Turkish Yogurt Soup

Ingredients

1 tbsp all purpose flour
2 tbsp butter
1½ cup yoghurt
½ cup arborio rice
1 egg yolk
1 tbsp dried mint
5 cups water or chicken stock
SIDS SALT & PEPPER to taste

Directions

Wash the arborio rice and boil it with 3 cups of chicken stock in a medium pot until it softens. Add 2 more cups of chicken stock and leave it to cool down.
Add egg yolk, yoghurt, and flour in a medium bowl and stir until it combines.
Add 8-10 tbsp from the warm yoghurt soup one tbsp at a time and stir it to mix the soup. If you skip this will not work.
Pour the mixture into your pot slowly and boil the soup for about 5-10 minutes.
Season with SIDS SALT & PEPPER.
Melt the butter in a pan, add dried mint and stir until the dried mint is fragrant.
Pour the butter mixture into the Turkish yoghurt soup and stir.
The soup is ready.
