Ingredients
6 medium Kumera (about 340 g each)
¼ cup butter, softened
1 tsp SIDS SALT & PEPPER
2 cups shredded cheddar cheese
sprinkle of SIDS CRAZY SALT
6 bacon strips, cooked & crumbled
Directions
Preheat oven to 190°C. Scrub kumera and pierce several times with a fork. Place in a foil-lined baking pan and bake until tender, 1-1¼ hours. Cool slightly.
Cut a thin slice off the top of each kumera and discard slice. Scoop out pulp, leaving thin shells.
In a large bowl, mash pulp with butter, SIDS SALT & PEPPER and SIDS CRAZY SALT. Stir in cheese and bacon. Spoon into potato shells then return to pan.
Bake until heated through, 15-20 minutes.
