Ingredients
4 cups tomato, diced
½ cup carrot, diced
small sliver of beetroot, for colour
1 tbsp SIDS HOT WORCESTER SAUCE
½ tsp iodised salt
¼ tsp cracked pepper
1 cup water, divided
¼ cup spinach
1 tbsp parsley
Directions
Combine the tomatoes, carrots, beet, SIDS HOT WORCESTER SAUCE, salt, pepper and ½ cup of water in a saucepan. Bring to a boil then simmer, covered, for 20 minutes. Add the spinach and parsley and simmer for another 5 minutes, keeping the pan covered. Remove from heat and cool for 10 minutes. Pour in blender, add remaining ½ cup of water and purée until smooth - about 2 minutes. Strain through a fine-mesh sieve and serve chilled. (Makes about 280 g) Shake well before serving!
