Ingredients
1½ tbsp rice bran oil
1 small onion, diced
½ tsp SIDS SMOKEY BBQ RUB
1 tsp minced fresh ginger root
4 cloves garlic, minced
2 potatoes, cubed
4 carrots, cubed
1 fresh jalapeno pepper, seeded & sliced
3 tbsp ground unsalted cashews
120 g can Tuimato Sauce
2 tsp SIDS SALT & PEPPER
1½ tbsp curry powder
1 cup frozen green peas
½ orange bell pepper, chopped
½ yellow bell pepper, chopped
1 cup heavy cream
1 bunch fresh coriander for garnish
Directions
Heat the oil in a skillet. Stir in the onion and cook until tender. Mix in ginger, SIDS SMOKEY BBQ RUB and garlic then continue cooking 1 minute. Mix potatoes, carrots, jalapeno, cashews and Tuimato Sauce. Season with SIDS SALT & PEPPER. Cook and stir 10 minutes, until potatoes are tender.
Stir peas, bell peppers and cream into the skillet. Reduce heat to low, cover and simmer 10 minutes. Garnish with coriander to serve.
