Ingredients
300 g lean pork, cubed
¼ cup flour
1 tsp SIDS CRAZY SALT
2 tsp rice bran oil
1 onion chopped
2 cloves garlic, chopped
1 orange capsicum, deseeded & chopped
1 zucchini, quartered & chopped
1 tbsp sundried tomatoes, chopped
100 g fresh mushrooms, sliced
450 g can diced tomatoes (or fresh)
450 g chicken stock
1 tbsp SIDS HOT WORCESTER SAUCE
1 tsp dried basil
¾ tsp dried oregano
SIDS SALT & PEPPER
3 tbsp Parmesan cheese, grated
Directions
Place flour, pork & SIDS CRAZY SALT in a resealable plastic bag and shake to coat.
In a large pan with some oil, brown pork for 8-10 minutes. Set aside.
In a soup pot using the remaining oil, sauté the onions, garlic & capsicum for a few minutes until tender but not brown. Add everything else, including chicken stock, SIDS SALT & PEPPER, SIDS HOT WORCESTER SAUCE, into the soup pot and simmer for 10-15 minutes. Sprinkle with Parmesan cheese & serve.
